Midstream processing involves starch slurrying, alkalization, cross-linking, phosphate esterification, neutralization, washing, dewatering, drying, and screening to produce heat-gelatinized starch; some products undergo further processing, such as drum drying or other pre-gelatinization treatments. Downstream applications span sauces and soups, dairy products, cheese, meat products, rice and flour-based foods, baked goods, and nutritional/health foods, where the starch serves to stabilize viscosity, control syneresis, improve water retention, and maintain texture after processing.
In 2025, global sales volume is approximately 40,000 metric tons, with a mainstream market price of around US$1,850 per ton and gross profit margins for leading manufacturers ranging from 22% to 30%.
Demand for phosphorylated distarch phosphate is primarily driven by the growth of convenience foods, industrial sauces, dairy products, frozen prepared foods, and high-fiber foods. Its advantages lie in combining the processing stability afforded by phosphate cross-linking with the hydration, viscosity, and water-retention properties provided by phosphorylation, making it particularly suitable for conditions involving high temperatures, acidity, shear stress, or repeated freeze-thaw cycles.
